Low-carb bread90gm ground almonds 2 very large eggs The aim here is to make something bread like which does not raise blood sugar too much. You might call it Keto bread or Diabetic bread. The amounts of ground nuts and flour can be changed as long as the total is 240gm. Clearly getting rid of flour reduces the carbohydrate content. Grind nuts fine enough and you end up with nut flour. Ground too much and they turn into nut butter. The magic 85gm of butter is about one and a half egg weights. Whisk up and melt the butter. Add yeast, sugar and water. Whisk. |
